This salsa. It knows that we’re here in the dog days of summer, when we’ve finally, maybe, had enough of the heat and glaring sun. When we’re maybe, definitely, looking forward to a few crisper, cooler days.
When we’ve definitely, definitely, started hoarding pairs of new boots in the spare bedroom so our husband won’t find them.
Oops.
This salsa. It won’t keep the noon sun from radiating its heat through our kitchen windows, practically frying us in the precise spot where we stand to do the dishes.
Let’s just stop doing the dishes, instead.
This salsa might be just the thing to fix us up in these sweltering hot, seemingly too-long days. It’s crisp and cool and juicy. Plums, cucumber, mint, and cilantro. Yes! And lime. Yes! Yes!
Dish it up with chips, slap it on top of some fish, shovel it in a taco. Shovel it in your husband’s face to distract him from the 5th UPS delivery this week.
What? I’m just preparing for the long, cold winter ahead.
Plum and Cucumber Salsa
2 cups plums, diced
1 1/2 cups cucumber, diced
4 tablespoons onion, minced
1 tablespoon fresh lime juice
3 tablespoons fresh mint, chopped
2 tablespoons fresh cilantro, chopped
1 teaspoon lime zest
1/2 teaspoon salt
Toss all the ingredients to combine and chill at least 1 hour before serving, allowing the flavors to come together.
Serves 4 to 6

I thought I was the only one who bought things and then hid them for months, so when my husband asks if it’s new, I can say “oh no, I’ve had it for months!” It’s definitely boot-hoarding time. And salsa time. I love the plums in this!
