I saved those for last and just filled them less, to make them less gooey and slippery!

The filling is perfect, not too lemony, and they look beautiful. The only huge problem I had was that the tops kept sliding off. My cookies had fully cooled too, but they kept tipping over and falling apart! Maybe the filling should be refrigerated and used while still cold? I just sandwiched them and rushed them to the freezer right away!
